Rolling Method

To steam milk for a latte using the rolling method, you'll need a steam wand on your espresso machine or a separate milk frother. Here are the steps to follow:

  1. Fill a metal pitcher with cold milk. The amount of milk you use will depend on the size of the latte you want to make.

  2. Purge the steam wand to get rid of any water that may be inside. Place the wand in the pitcher of milk, just below the surface.

  3. Turn on the steam wand and position it so that it's just below the surface of the milk. You'll hear a hissing sound as the steam starts to heat and aerate the milk.

  4. Keep the steam wand to the front of the jug in the center so that the milk rolls from the back to the front, creating the rolling effect, which will help incorporate the steam into the milk.

  5. As the milk heats up, you'll notice that it starts to expand and the volume increases. Keep steaming the milk until the pitcher is too hot to touch, and the milk reaches a temperature between 140°F to 160°F (60°C to 71°C).

  6. Turn off the steam wand and give the pitcher a few taps on the counter to remove any large bubbles.

  7. Swirl the pitcher to mix the milk and foam together.

  8. Pour the steamed milk over a shot of espresso in a cup, holding back the foam with a spoon.

  9. Finish off the latte with a layer of foam on top.
